Onion Pancakes


Ingredients :
225g plain flour
150ml cup water
15ml lard (I change with melted butter)
6 spring onion, finely chopped
5ml salt
10ml sesame oil
oil for friying

Method:
- sift the flour intoa large bowl and pour in the water,a little at time, strirring to create a smooth dough
- work the dough until it is soft and pliable, knead for 5 min and set aside, covered with a damp cloth, for 20 min
- divide the dough into 12 pieces. Roll out into rectangles 5mm thick.
- toss the spring onions with salt and sesame oil. Brush each pancake with melted butter and scatter with some of chopped spring onion.
- roll up the pancakes lenghtways to encase the onions then flatten slightly so that they will not unwrap during cooking
- heat a wok with 15ml oil and fry the pancakes one or two at a time until light brown along the edges. add more oil as required.
